Recipe 1 - Fennel Salad

This salad is great as an appetiser or a starter. It is fresh, crunchy, earthy, nutty and surprising. Served in a pearly shell it looks amazing!

First start with the falafel balls. Cook the chickpeas and let them cool. Mash them in a blender with all the ingredients, but don’t pulverise them completely….leave it to have a little structure. With the use of almond flour you can make the mass into the right consistency so you can roll balls. Put them in the fridge for at least an hour to let the flavours mingle and set. You can also do the same thing with white flageolet beans.

Make a simple dressing of oil, lemon or lime juice (I prefer lime juice cause it has a more flavourful taste than lemon) salt and pepper and if you like a little fresh garlic. Don’t overdo the garlic. The tastes are quite delicate and you don’t want to override it with loads of garlic.

Cut and slice all the different vegetables and the parsley. Put it into a bowl and drizzle a little lemon juice over it to stop the discolouration.

Make up the plate as you wish. To add a little contrast I like to use dollops of balsamic-honey cream.

Then roll the falafel into little balls and put them on top. Don’t make the balls too big. You don’t want them to fully fill your mouth and become overwhelming.

Recipe 2 - Flaxseed Bread

This is a very light and fluffy bread. Don’t overeat. It is not good to eat more than 45 grams of flax seeds per day.

Preheat the oven at 190 degrees Celsius. Grease the baking form. Put the flax seed flour, the almond flour, the baking powder, the rosemary and the salt in a big bowl. Give it a good stir. Whisk the eggs in another bowl…and on a warm place (oven or stove) make the coconut oil fluid. Put the water, the oil and the eggs together and whisk them and then put the mass together with the flour in the big bowl. Stir it until it becomes a homogenous mass. Put the dough in the baking form and put the form in the oven for about 60 minutes!”

Let it cool down before cutting and serving it.
